
Discover my express no-bake banoffee recipe. When you mix bananas, caramel and whipped cream you get a delicious banoffee! Here I made a simplified individual version of it without cooking.
* Ingredients
+ For the base:
° 120 g of speculoos
° 45 g of butter + a little for the circles
+ For garnish :
° 200 g of whole liquid cream
° 100 g of mascarpone
° 1 sachet of vanilla sugar
° 1 or 2 ripe bananas
° 4 tablespoons of salted butter caramel
° Dark chocolate for decoration (optional)
* PREPARATION

20 minutes before preparing the recipe, place the liquid cream, a salad bowl and the whips of the mixer in the freezer or freezer: this will allow the whipped cream to easily rise.

Prepare the base of the cakes: Lightly butter the circles then place them on 4 plates. Dissolved butter in a little saucepan and set aside. Mix the speculoos or crush them. Place the cookies in a freezer bag and crush them finely with a rolling pin. Mix the cookie powder with the melted butter: you get a kind of wet sand. Distribute the mixture in each circle and pack well (with a glass for example).

Start the assembly: Place a drizzle of caramel on the bottom of the cookies . Cut the banana (s) into thin slices. Distribute the slices on each speculoos base, in a rosette: I counted 8 slices of banana per person. Drizzle with a drizzle of caramel then set aside in the fridge.

Prepare the cream: Take out the cream, the whips and the salad bowl. Pour in the cream, add 100 g of mascarpone and a sachet of vanilla sugar. Start whipping at low speed and gradually increase until the cream is firm.

Avoid whipping for too long otherwise the cream will become grainy. Generously distribute the cream in each circle and smooth the top. Refrigerated .
Finally
Before serving: Decorate with slices of bananas (if any remaining), caramel, speculoos crumbs or like me with a little grated coconut and chocolate shavings. Unclip using the blade of a knife quickly dipped in lukewarm water. Serve well chilled.
